A cup of coffee is just the thing, on dark and dreary days like these when it is raining. I stirred up a batch of sugar cookies from one of Mom’s old recipes, and filled it with raspberry jam. It uses oil, so the manner of mixing is just a little different. Mom always used raspberry jam and that is so very good but I noticed that the stores have a raspberry filling (like you would use for cheese cakes and pies that doesn’t have near the sugar, but still good). You might want to try it.
What is so great about this cookie is that they stay soft for days after you make them. (If they last that long.)

This May everyone will have a choice on many different topics, from commissioners, to taxes.
The 4-H, Master Gardeners, and Master Food Preservers, all a part of the Oregon State Extension, will loose funding on July 1, 2008 unless a double majority votes in favor of a tax that would fund these programs and more very easily.

When you want just a little something to go with a good cup of coffee, share with a special friend or a neighbor. This little cake fills the bill. This is a nice little treat to share with your favorite Valentine before you both head off to work.
9“ Square Coffee Cake
This is a 9” square cake which can use the streusel filling with nuts and raisins, chocolate chips, blueberries, etc. It is fun to come up with new variations and is quick and easy to make and freezes well, too.

The history of Scones Scone ---[SKOHN, SKON] This Scott ish QUICK BREAD is said to have taken its name from the Stone of Destiny (or Scone), the place where Scottish kings were once crowned. The original triangular-shaped scone was made with oats and griddlebaked. Today's versions are more often flour-based and baked in the oven. They come in various shapes including triangles, rounds, squares and diamonds.
This time of year most of us are looking for something different to touch our taste-buds and sort of ‘wake us up’. The following is that kind of recipe. These scones are great in the morning with coffee. Use your coffee grinder to grind the walnuts into a ‘meal’, it works fast and easy.
The Cranberry Cream Cheese turns out to be a beautiful mulberry color. It can be stored in the fridge for up to four days.

This kind of weather makes you want to put something on the stove to simmer. So pull out the crock pot. Having something cooking makes the kitchen smell inviting. The leftovers of this soup can be frozen and used when you’re running short of time.
